WHOLEMEAL PASTA
In addition to having a lower glycemic index than refined grains, wholemeal pasta and more generally whole grains are rich in fiber and stimulate the mechanisms of protection against cell damage. Consuming 170 grams of whole grains can reduce the risk of colorectal cancer by 21%.
An interesting case is the one of the stone milling of the Russello variety durum wheat which allows to obtain a wholemeal semolina that preserves the "noble" part of the wheat germ, making the product rich in nutrients including fatty acids which are very important for cells’ structure, tissues and organs. These are mainly omega 3 and 6 unsaturated fatty acids which have a cholesterol-lowering and anti-inflammatory effect. They are also called essential fatty acids as they are not produced by our body and must necessarily be introduced with the diet.

BUSIATE - ancient Sicilian Russello wheat
Busiate are a typical pasta of the province of Trapani: a sort of macaroni twisted to create a soft spiral. To make this shape, a special wire is used on which a small part of the dough is wrapped. The name Busiate seems to derive from the use of this iron called "buso". In the same way (busa) the very thin stem of a plant was called, originally used as a stick to create this pasta shape.
