The amberjack is a blue fish and represents the largest member of the Carangidae family. It can reach 2 meters in length and 70–100 kg in weight. Being very voracious and always on the move, it does not lend itself to breeding, due to the enormous amount of proteins necessary for growth, which make this activity uneconomical.

It is a very lean food, with a low intake of calories (146 Kcal per 100 g) all coming from substances very important for our health. Amberjack has lean and digestible meats, with a moderate caloric intake: the lipids contained are mainly polyunsaturated, with a good percentage of Omega-3 and Omega-6 essential fatty acids. This version in extra vergine olive oil amazes for the compactness of the meat and for the balance and integrity of the flavors it manages to express.
