Albacore tuna is a widespread species in the Mediterranean Sea. Its presence is particularly massive around the Aeolian Islands. It is very similar to bluefin tuna (red tuna): the most evident feature is the pronounced pectoral fins.

The color is similar to that of bluefin tuna (red tuna), dark blue on the back and white on the sides and belly, without dark markings. It reaches one meter in length and 25 kg weight. The catch of this Mediterranean Wild Tuna is hooked with the trolling technique (with no nets), a selective and non-invasive technique on other species. This species is attracted by sprinkling water behind the stern of the boat. The flesh is pinkish white and not red; by some it is preferred to that of bluefin tuna, because it is leaner.

This variety of fine tuna rich in omega 3 is also suitable for refined appetizers to be served by bringing to the table slices preserved in oil, combined with fresh and crunchy vegetables flavored with an anchovy. Try using brightly colored veggie, such as peppers, in order to play on the contrast of colors.
