The amberjack is a blue fish and represents the largest member of the Carangidae family. It can reach 2 meters in length and 70–100 kg in weight. Being very voracious and always on the move, it does not lend itself to breeding, due to the enormous amount of proteins necessary for growth, which make this activity uneconomical.
The amberjack is a blue fish that stands out for the delicacy of its flavor and for the richness of nutritional properties it possesses. It is a very lean food, with a low intake of calories (146 Kcal per 100 g) all coming from substances very important for our health.
